
The weather here continues to be fickle (I seriously need to stop talking about the weather), but I’m making the most of it by wearing my favorite rain gear and cooking up some serious comfort food. While a cupcake makes any day a little bit brighter, when I found this recipe for lasagna ‘cupcakes’ (thanks once again to Pinterest!) I knew it was just what was needed for dinner after a cold chilly day. These cheesy bites couldn’t be easier to whip up-it’s pretty much just round wonton wrappers, ricotta, tomato sauce, and mozzarella cheese. Who said cupcakes have to be sweet and topped with frosting?
